Brut d'Eulalie is a blend of predominantly Pinot Noir from four parcels of old vines located on the upper slopes of the estate and Chardonnay from the locality of "L'épicea". About a quarter of the wines are fermented and aged in Burgundian demi-muids, the rest in stainless steel tanks.

The dress
The Champagne has a luminous and fluid robe, with a pale yellow gold color. It is animated by fine and lively bubbles that feed a persistent cordon. The visual sensation announces a rich and fresh wine.
The Nose
The nose is typical of our terroir, expressing intense odors of iodized limestone mixed with notes of lemon, cherry. The aeration of the Champagne reveals notes of raspberry, pink grapefruit.
The Palate
The first contact in the palate is soft and fresh with a creamy and melted effervescence. The Champagne develops a pulpy and crunchy fruity matter, underlined by a lemon and pomelo acidity.
